Oyster mushrooms of all varieties are prized in the culinary world for their flavor, texture, and visual appeal, and  are high enough in protein that they are used as a satisfying alternative to meat (it’s often said that pink oyster mushrooms taste like bacon!)

If you are working on king oyster mushrooms, there are some really neat things you can do with them because of their shape, density and texture (in the first video, one of my favorites, the chef demonstrates three ways to cook a king oyster, including a technique similar to creating pulled pork and another one where they slice the stalk into mushroom scallops and sear them to perfection.) another chef demonstrates a fried chicken approach that is just spectacular.
